This is back inside the
market, what you are seeing here is a display of the Chinese
name stamps or "chops" before they have a name carved on them.
You select the one you like depending on the size and
decoration.
Then you get the shop to
engrave your name, in Chinese of course, on the bottom of the
stamp. That turns it into a "Chop" and by using a block of
ink you can then use it to seal or sign a document.
